I made tacos for dinner Monday. I've eaten tacos for dinner every night since. I can not eat anymore. That is one of the few problems of living alone. Cooking for one is tricky. I could either use the entire package of ground beef or, divide it, freeze part and possibly never use the frozen portion. So, I cook the whole package. Then, eat leftovers. And get sick of tacos very quick. This is probably why I don't cook as often as I should. Portion control.

I think you should still make the big batch, and freeze half into summie size portions. Then when you don't feel like cooking, you can just pull some yummy leftovers out of your freezer. Cooking for 2 can be challenging too, we sometimes eat the same dinner two nights in a row, and then if there is anything leftover, one of us will eat it for lunch the next day.
Is Jason not a big eater like some guys?
The trick to freezing something like tacos is all the fixin's. Like tomato, sour cream, taco sauce.....
Jason is a "big eater" during late fall and winter, but during spring and summer he eats pretty light. Sour cream, taco sauce, shredded cheese are things that have a relatively long shelf life, even after being opened, so it shouldn't be too much of a problem to freeze your taco meat. We don't mind eating the same dinner 2 nights in a row, we'd rather just chill when we get home from work and not worry about getting up the energy to cook.
